One of the oldest co-ops in Burundi, Yagikawa is a group of over 800 small holder farms in the region of Kayanza. Each farmer brings their cherry to the co-op where the fruit is processed and exported. The variety here is Red Bourbon, a natural mutation that was first cultivated in Yemen and exported to the island of Bourbon, now known as Réunion. We find the cup to be dominated by savory flavors with a clean citric acidity.
