Ernelio Ortiz owns and managed Finca El Pedrero in the Montecillos region of Honduras.  He grows mostly the varieties catuai and Icafe90.  This lot is a blend of these two and is naturally processed after going through an anaerobic fermentation process which yields intense & boozy flavors.
