Synastry

The term synastry comes from the ancient Greek sunastria or "conjunction of the stars." Today, it is the study of relational compatibility between individuals as determined by astrology. With this blend, we are seeking to showcase a harmonious combination of new & old world coffees. Though the specific components sometimes change with the seasons, a profile of vivid fruit balanced by a chocolate forward body is always the goal. In our cafes we find this blend to shine through a variety of brewing methods including espresso, batch brewed filter, & flash brewed with hot water onto a bed of ice. Currently the blend is composed of an equal ratio of washed Castillo from Huila, Colombia & washed Ethiopian heirloom seeds from the Hambela washing station in Guji.
